Oh, and did I mention they take a total of 15 minutes to prepare?

Process 2 cups shredded coconut with 3 tbsp coconut flour. Add 1/3 cup raw honey, 1 tsp peppermint extract, a handful of cacao nibs, 1/4 cup coconut oil, and a pinch of sea salt. Process completely.

Refrigerate this mixture for 10 minutes or so.

Remove from the fridge and form into small balls. Refrigerate again as you prepare the chocolate.

Melt 1/3 cup cacao paste (or your favorite organic dark chocolate if you’re not a super stickler about all raw ingredients).
**How to melt the chocolate without overheating it? Bring a few cups of water to a boil. Place a skillet or bowl with your cacao paste over the pot with the boiling water. Turn the heat off. Let the steam melt the chocolate.

Dip your refrigerated snowflakes into the melted chocolate and place upside down on parchment paper until the chocolate solidifies (shouldn’t take more than a few minutes).

Refrigerate again until you’re ready to serve!
